This course will qualify graduates as a commercial cook, specialising in patisserie. It aims to
prepare participants for work within the hospitality industry in areas such as hotels, restaurants,
pubs, clubs and catering businesses, cafes, cake shops and other specialty patisserie venues.
Graduates will learn multiple skills and techniques to produce a wide range of specialty patisserie
items used by many businesses in today’s vibrant food industry. These items include sugar
work, pastry, chocolate, desserts, cakes and gateaux. Students will also acquire leadership and
supervisory skills which will enable them to run a successful business. Practical placement is
given to students in Holmesglen’s student training restaurants with further opportunities available
in leading 5-star hospitality venues in Melbourne. Holmesglen staff can also assist students in
obtaining employment in the hospitality industry whilst undertaking this course.
On successful completion of this course, students are eligible to apply for 6 months of study to
undertake the Advanced Diploma of Hospitality to acquire further skills for supervisory positions
within the hospitality industry. On completion of the Advanced Diploma, students may apply for entry
into Holmesglen’s Bachelor of Hospitality Management or the Charles Sturt University Bachelor of
Hotel Management delivered at Holmesglen.

This course will qualify graduates as a cook, specialising in Asian cookery. Graduates will learn
multiple skills and techniques to produce a wide range of specialty Asian items needed for today’s
modern Asian cuisine. These items include curry pastes and powders, Asian stocks, soups and
salads, and various Asian seafood and meat dishes. Several Asian cuisines including Japanese,
Indian, Chinese and Thai are explored throughout this course. Students will also acquire leadership
and supervisory skills which will enable them to run a successful business.
Practical placement is given to students in Holmesglen’s student training restaurants with further
opportunities available in leading 5-star hospitality venues in Melbourne. Holmesglen staff can also
assist students in obtaining employment in the hospitality industry whilst undertaking this course.
