COURSE DESCRIPTION/SKILLS COVERED
12 core units: Implement the food safety program
and procedures; monitor the implementation
of quality and food safety programs; supervise
and maintain a food safety plan; monitor the
development and implementation of a food QA
system; perform microbiological procedures
in the food industry; establish operational
requirements for a food processing enterprise;
maintain OHS processes; apply principle
of statistical process control; control food
contamination and spoilage; describe and
analyse data using mathematical principles;
implement and monitor environmentally
sustainable work practices; perform chemical
tests and procedures; plus 8 elective units.

Food science and technology covers all areas
of food production including dairy, cheese
making, retail meat butchery, meat processing,
baking, as well as brewing and beverages.
Laboratory operations involve the chemical and
microbiological testing of food or in testing the
functionality of ingredients that have recently
become available.
